Prepare the Dipping Sauce: In a small, microwave-safe bowl, combine 1/2 cup water and white sugar. Microwave for approximately 30 seconds, or until the sugar is completely dissolved. (30 seconds)

Stir in 2 tablespoons soy sauce, 2 tablespoons rice vinegar, ketchup, lemon juice, and sesame oil until well combined. Cover with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. (30 minutes)

Prepare the Hot Mustard: In a separate small bowl, combine the dry mustard with a few drops of water to form a paste. Gradually mix in the remaining water until you achieve the consistency of hot mustard. Set aside.

Make the Stir-Fry Sauce: In another small bowl, whisk together 2 tablespoons soy sauce, brown sugar, and ½ teaspoon rice vinegar until the sugar is dissolved. Set aside.

Cook the Pork: Heat 2 tablespoons of peanut oil in a wok or large skillet over high heat. Add the ground pork and cook, breaking it up with a spoon, until browned, about 5 minutes. (5 minutes)

Add Aromatics and Vegetables: Add the remaining 1 tablespoon of peanut oil, water chestnuts, mushrooms, green onions, and garlic to the skillet. Sauté until the vegetables are tender and fragrant, about 2 minutes. (2 minutes)

Combine and Simmer: Pour the stir-fry sauce over the pork mixture. Stir to coat evenly and cook for 3 to 4 minutes, allowing the sauce to thicken and the flavors to meld. (4 minutes)

Prepare the Lettuce: While the pork is cooking, prepare the lettuce. Cut out the stem of the iceberg lettuce and wash the leaves thoroughly. Discard any outer leaves that are damaged. Carefully peel off the remaining whole leaves and slice them in half lengthwise. Arrange the lettuce leaves on a plate lined with paper towels to absorb excess moisture.

Assemble and Serve: Scoop the dipping sauce into small bowls or ramekins. Stir in the prepared hot mustard and red chile paste to your desired level of spiciness. Spoon the pork filling into the lettuce halves and roll up or fold. Top or dip the wraps with the dipping sauce and serve immediately.

For a vegetarian option, substitute the ground pork with crumbled firm tofu or a plant-based ground meat substitute.
If you don't have rice vinegar on hand, you can substitute with white wine vinegar or apple cider vinegar.
Feel free to add other vegetables to the stir-fry, such as bell peppers, carrots, or snap peas.
Adjust the amount of red chile paste in the dipping sauce to your personal preference for spiciness. Sriracha or chili garlic sauce can also be used.
For a gluten-free version, use tamari instead of soy sauce.
