For extra flavor, saute the chopped onion with a minced clove of garlic until softened before adding to the slow cooker.
Adjust the amount of chili powder to your preference for heat.
Garnish with chopped cilantro, a dollop of sour cream or Greek yogurt, a squeeze of lime juice, or a sprinkle of shredded cheese.
If you don't have ranch-style beans, you can use pinto beans and add a dash of your favorite hot sauce.
For a smoother stew, use an immersion blender to partially blend the stew before adding the potato flakes.
