In a separate medium bowl, whisk together the eggs and 1 cup of water. Pour this mixture into the well in the flour mixture. Stir until just combined; the spaetzle dough will be thick and sticky. (5 minutes)

Bring the remaining 4 cups of water to a rolling boil in a large pot over high heat. Add the salt. (10 minutes)

Place the spaetzle dough onto a cutting board. Using a sharp knife, slice off small portions of dough, roughly the size of a pretzel stick. Drop these into the boiling water. Cook until the spaetzle float to the surface, about 1 to 2 minutes. Transfer the cooked spaetzle to a bowl using a slotted spoon and set aside. (20 minutes)

In a large frying pan or skillet, melt the butter over medium-high heat. Add the brown sugar, minced garlic, and cayenne pepper. Stir continuously until the sugar is completely melted, about 1 minute. (5 minutes)

Add the sliced kielbasa and the cooked spaetzle to the butter mixture. Stir continuously over medium-high heat until the kielbasa is heated through and slightly caramelized, about 4 to 5 minutes. (5 minutes)

For a richer flavor, use browned butter in the final step.
Adjust the amount of cayenne pepper to suit your spice preference.
Fresh herbs are recommended for the best flavor, but dried herbs can be substituted (use about 1 teaspoon each of dried basil and parsley).
