Combine the base: In the bowl of a food processor, add the garbanzo beans, tahini, lemon juice, olive oil, sun-dried tomatoes (reserving 1-2 for garnish), and maple syrup. (2 minutes)

Incorporate the aromatics: Add the fennel seed, nutritional yeast, and chopped red onion to the food processor. (1 minute)

Final blend: Blend again until well combined and the mixture is smooth. (1-2 minutes)

Season and adjust: Season to taste with salt, black pepper, and cayenne pepper (if using). Adjust lemon juice for brightness, or add a tablespoon or two of water for a creamier consistency. (2 minutes)

Serve: Transfer the hummus to a serving bowl. Drizzle with extra virgin olive oil and garnish with the reserved sun-dried tomatoes, finely chopped. Serve with your favorite dippers. (2 minutes)

For a smoother hummus, peel the skins off the garbanzo beans before blending.
The oil that the sun-dried tomatoes are packed in is flavorful – try drizzling a little on top of the finished hummus!
If you don't have red onion, white or yellow onion will also work.
This hummus can be stored in an airtight container in the refrigerator for up to 5 days.
