Once the orzo is cooked, drain it thoroughly, ensuring no excess water remains. Do not rinse. Immediately add the hot orzo to the bowl with the vegetables. (2 minutes)

Pour the red wine vinegar, salad seasoning mix, and olive oil over the orzo and vegetables. Toss gently but thoroughly to ensure all ingredients are evenly coated with the dressing. (3 minutes)

Cover the bowl tightly with plastic wrap or transfer the salad to an airtight container. Refrigerate for at least 8 hours, or preferably overnight, to allow the flavors to meld. (8 hours)

If you don't have a salad seasoning mix on hand, you can create your own blend using dried oregano, basil, garlic powder, onion powder, and a pinch of salt and pepper.
