Follow The Directions

01

Step

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch sheet pan to prevent sticking. (Prep time: 5 minutes)

02

Step

Wash and hull the fresh strawberries. In a blender or food processor, puree the strawberries until smooth. Measure out 1 1/4 cups for the cake batter and set aside 1/2 cup for the frosting. (Prep time: 10 minutes)

03

Step

In a large mixing bowl, combine the white cake mix, 1 1/4 cups of the strawberry puree, eggs, oil, and strawberry gelatin powder. Beat with an electric mixer on medium speed until thoroughly combined and smooth. (Mixing time: 5 minutes)

04

Step

Pour the batter into the prepared sheet pan and spread evenly. (Prep time: 2 minutes)

05

Step

Bake in the preheated oven for 35 to 45 minutes, or until a toothpick inserted into the center comes out clean. (Baking time: 35-45 minutes)

06

Step

Remove the cake from the oven and let it cool completely on a wire rack. (Cooling time: 1 hour)

07

Step

Strawberry Frosting: In a mixing bowl, combine the softened butter and cream cheese. Beat with an electric mixer until light and fluffy. (Mixing time: 3 minutes)

08

Step

Add the reserved 1/2 cup of strawberry puree, powdered sugar, and vanilla extract to the butter and cream cheese mixture. Beat until the frosting is smooth and creamy. Add more powdered sugar if needed to reach your desired consistency. (Mixing time: 5 minutes)

09

Step

Once the cake is completely cooled, frost it generously with the strawberry cream cheese frosting. (Frosting time: 10 minutes)

10

Step

Refrigerate the frosted cake for at least 30 minutes before serving to allow the frosting to set. (Refrigeration time: 30 minutes)

For an extra burst of flavor, consider adding finely chopped fresh strawberries to the cake batter or as a garnish on top of the frosting.
If you don't have strawberry gelatin, you can substitute it with an equal amount of strawberry extract for a more subtle strawberry flavor.
To prevent the cake from sticking, you can also line the sheet pan with parchment paper before greasing and flouring it.
The frosting can be made ahead of time and stored in the refrigerator for up to 3 days. Just make sure to bring it to room temperature before frosting the cake.

Be careful not to overbake the cake, or it will be dry. Check it frequently towards the end of the baking time.

Next time, I think I'll try using a strawberry cake mix instead of white for even more strawberry punch!
