For an extra layer of flavor, try infusing the heavy cream with citrus zest or a cinnamon stick while heating it. Remove the zest or cinnamon before adding the cream to the egg yolks. If you don't have a culinary torch, you can broil the custards to caramelize the sugar. Make sure to keep a close eye on them to prevent burning. The custard can be made ahead of time and stored in the refrigerator for up to 2 days. Brûlée the sugar just before serving.
