In a medium bowl, combine the shredded chicken, half of the pepper Jack cheese, Cheddar cheese, 2 tablespoons of sour cream, 1 tablespoon of hot pepper sauce, cilantro, red pepper flakes, garlic powder, and onion powder. Mix well until everything is evenly distributed. (10 minutes)

Place equal amounts of the chicken filling onto each tortilla. Roll tightly to close, ensuring the filling is secure. Place the rolled taquitos seam-side down onto the prepared baking sheet. (10 minutes)

Bake in the preheated oven for 10 minutes. Turn the taquitos over, sprinkle with the remaining pepper Jack cheese, and continue baking until the cheese is melted and the taquitos are crispy, approximately 5 more minutes. (15 minutes)

While the taquitos are baking, prepare the dipping sauce. In a small bowl, mix the remaining sour cream with 1 tablespoon of hot pepper sauce. Adjust the amount of hot sauce to your preference. Serve the taquitos immediately with the dipping sauce. (2 minutes)

For an extra crispy taquito, lightly brush the rolled tortillas with olive oil or cooking spray before baking.
Adjust the amount of hot pepper sauce and red pepper flakes to control the level of spiciness.
Feel free to add other ingredients to the filling, such as black beans, corn, or diced bell peppers.
These taquitos can also be deep-fried for a more indulgent treat. Fry in hot oil until golden brown and crispy.
For a vegetarian option, substitute the chicken with seasoned black beans or crumbled tofu.
