For an even more intense coconut flavor, toast the shredded coconut before adding it to the filling and as a garnish. Ensure the cakes are completely cool before slicing and frosting to prevent the frosting from melting. If you don't have a double boiler, you can create one by placing a heatproof bowl over a saucepan filled with about an inch of simmering water. Make sure the bottom of the bowl doesn't touch the water. The meringue frosting is best used immediately after making it, as it can become slightly sticky if left to sit for too long.
