Place the chicken into a large pot and fill with enough water to cover it. Bring to a boil, cover, and cook over high heat until the chicken is easily removed from the bone (approximately 35 minutes). Turn the chicken over once during cooking to ensure even cooking.

While the chicken is cooking, cut two of the potatoes into large chunks and the remaining potato into very small cubes.

Once the chicken is cooked, remove it from the pot. Remove the skin and shred the chicken meat into long pieces, placing it in a separate dish. Reserve the cooking water in a separate container. Discard the chicken skin and bones.

Pour the chicken broth into the pot and add the potatoes, shredded chicken, salt, and pepper. Pour in 2 to 3 cups of the reserved chicken water. Bring to a boil and cook for about 15 minutes, or until the potatoes start to soften. Add 3 more cups of the chicken water and the egg noodles. Season with the salt-free seasoning blend, salt, and pepper. Cover and simmer over medium-low heat until the noodles are tender and the small potato pieces have mostly dissolved.

For a richer flavor, consider using homemade chicken broth.
Adding a bay leaf or a sprig of thyme to the cooking water can enhance the aroma of the chicken.
Feel free to adjust the amount of reserved chicken water to achieve your desired consistency.
If you prefer a thicker sauce, you can mix a tablespoon of cornstarch with a bit of cold water and stir it into the pot during the last few minutes of cooking.
