Sauté the Tofu: Heat vegetable oil in a large skillet or wok over medium heat. Add the tofu cubes and cook, stirring occasionally, until lightly browned and firm. Transfer the tofu to a plate and set aside. Leave the skillet over the heat. (8 minutes)

Make the Peanut Sauce: In a microwave-safe bowl, whisk together soy sauce, lime juice, sugar, peanut butter, and sriracha. Microwave for about 20 seconds, or until the peanut butter is melted and the sauce is smooth. Stir well to combine. (2 minutes)

Scramble the Eggs: Pour the lightly beaten eggs into the hot skillet and cook, stirring constantly, until scrambled and cooked through. (5 minutes)

Combine and Simmer: Add the sliced mushrooms and cooked tofu to the scrambled eggs. Pour in half of the peanut sauce and mix well. Drain the shirataki noodles thoroughly and add them to the skillet along with the remaining peanut sauce. Sprinkle 1/4 cup of the chopped cashews over the mixture and stir to combine. Reduce heat to medium-low and simmer until the sauce thickens slightly, stirring occasionally. (7 minutes)

Serve: Transfer the Pad Thai to a serving bowl or individual plates. Top with the remaining cashews, fresh bean sprouts, and lime wedges. Serve immediately.

For best results, press the tofu for at least 30 minutes to remove excess water before cooking.
Adjust the amount of sriracha to suit your spice preference.
If you don’t have a microwave, you can melt the peanut sauce ingredients in a small saucepan over low heat.
Garnish with chopped cilantro and green onions for added flavor and visual appeal.
