In a large skillet, cook the diced bacon over medium-high heat until slightly browned and the fat has rendered, about 5 minutes. Add the chopped onion to the skillet and cook in the bacon fat, stirring occasionally, until translucent and softened, about 5-10 minutes. Continue cooking the bacon until crisp.

Remove the bacon from the skillet and drain on a paper towel-lined plate. Once cooled, crumble the bacon into small pieces.

Stir in the chopped tomatoes, tomato sauce, cilantro, minced jalapeño, and crumbled bacon into the skillet with the onion. Season with salt and freshly ground black pepper to taste.

Bring the mixture to a simmer over medium heat. Reduce the heat to low and cook, uncovered, allowing the flavors to meld and the sauce to thicken slightly, about 15 minutes. Stir occasionally.

For a smoother sauce, use an immersion blender to lightly blend the sauce after simmering.
Adjust the amount of jalapeño to control the heat level. Remove the seeds and membranes for a milder flavor.
Freshly made ranchero sauce can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
