In a medium saucepan, melt the butter over medium heat. Add the sage leaves and cook, stirring occasionally, until the butter is infused with the sage aroma and the leaves become crispy, about 5 minutes.

Whisk in the heavy cream, pumpkin puree, nutmeg, cinnamon, and Parmesan cheese. Continue cooking, stirring frequently, until the cheese is fully melted and the sauce is smooth and slightly thickened, about 5 minutes. Do not boil.

Taste and adjust seasonings as needed. If the sauce is too thick, add a tablespoon of milk or cream at a time until desired consistency is reached.

Serve immediately over your favorite cooked pasta. Garnish with additional Parmesan cheese and fresh sage leaves, if desired.

For a smoother sauce, use an immersion blender to blend the sauce before serving.
If you don't have fresh sage, you can use 1/2 teaspoon of dried sage. Add it along with the nutmeg and cinnamon.
A pinch of red pepper flakes can add a nice touch of heat to balance the sweetness of the pumpkin.
