Pour in the Shaoxing rice wine and season with salt to taste. (30 seconds)

Return the stir-fried bamboo shoots to the wok and heat until sizzling. (1 minute)

Stir in the rice vinegar, soy sauce, and chicken broth. Season with additional salt to taste. Cook and stir for 1 to 2 minutes to allow the flavors to meld and penetrate the bamboo shoots. (2 minutes)

Remove the wok from the heat and stir in the sesame oil just before serving.

For a vegetarian option, substitute the ground pork with sliced mushrooms or tofu.
