Poach the Pears: In a saucepan large enough to accommodate the pears standing upright, combine water and sugar. Bring to a simmer over medium heat, stirring until the sugar is completely dissolved. Stir in vanilla extract. Gently place the pears into the simmering syrup. Reduce heat to low, cover, and simmer gently for 15 minutes, or until the pears are tender but still hold their shape. Allow the pears to cool in the poaching liquid. Once cooled, carefully remove and drain the pears. (30 minutes)
