Follow The Directions

In a small saucepan, combine rice vinegar, sugar, and bay leaf. Bring to a simmer over medium heat. (5 minutes)

Whisk until the sugar dissolves completely, then remove from heat and discard the bay leaf. Season with salt and pepper to taste. Set aside to cool completely. (20 minutes)

Spread cucumber and radish slices onto a layer of paper towels. Sprinkle evenly with sea salt. Let stand for 10 minutes to draw out excess moisture.

Rinse the cucumber and radish slices thoroughly under cold running water to remove the salt. Pat dry with paper towels. (5 minutes)

In a large bowl, gently toss together the cucumber, radish, sweet onion, tomatoes, chives, cilantro, garlic, and white pepper.

Drizzle the cooled rice vinegar dressing over the salad. Toss gently to ensure all ingredients are evenly coated.

For the best flavor, allow the salad to marinate in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld together beautifully.
If you don't have a mandolin, use a sharp knife to carefully slice the cucumbers, radishes, and onion as thinly as possible.
Feel free to adjust the amount of sugar and salt in the dressing to suit your personal taste.
