Add hens to the bag, seal, and coat thoroughly with the marinade. Refrigerate for at least 1 hour, or up to 4 hours, flipping the bag occasionally. (Marinating time: 1-4 hours)

Preheat oven to 450 degrees F (230 degrees C). (Prep time: 10 minutes)

In a separate bowl, whisk together orange juice, soy sauce, honey, 1/4 cup Dijon mustard, onion, ginger, and black pepper to create the orange glaze. (Prep time: 5 minutes)

Remove hens from the marinade and place them in a roasting pan, discarding the used marinade. (Prep time: 2 minutes)

Roast the hens in the preheated oven for 50 minutes. (Cook time: 50 minutes)

Brush the hens generously with the orange glaze and continue roasting for 5 more minutes. (Cook time: 5 minutes)

Flip the hens, brush with more glaze, and roast until the meat is no longer pink in the center and an instant-read thermometer inserted near the bone registers 165 degrees F (74 degrees C), about 5 more minutes. (Cook time: 5 minutes)

For a deeper flavor, marinate the hens overnight.
If the glaze starts to darken too quickly, tent the hens with foil.
Serve with roasted vegetables or rice pilaf for a complete meal.
