For a richer flavor, use a high-quality artisan cornbread mix. If you prefer a less spicy dressing, use mild or sweet Italian sausage. Fresh oysters can be substituted for canned, but be sure to shuck them and reserve their liquor. Adjust the amount of oyster liquid to achieve your desired level of moisture in the dressing. You may not need to use all of it. Feel free to add other vegetables such as bell peppers or mushrooms to the sautéed mixture for added depth of flavor.
