For a deeper, more complex flavor, lightly toast the whole spices (coriander seeds, cumin seeds, peppercorns, cinnamon stick, and nutmeg) in a dry pan over medium heat for 2-3 minutes before grinding. Allow to cool completely before grinding and mixing with the salt. Adjust the quantities of each spice to suit your personal preference. For a spicier rub, add a pinch of cayenne pepper or red pepper flakes. This spice rub is also delicious when used to season roasted vegetables, such as potatoes, carrots, or zucchini.
