For a smoother dressing, use a high-powered blender. If you don't have fresh lemon juice, bottled is okay, but fresh is always better. Store the dressing in an airtight container in the refrigerator for up to 1 week. The olive oil may solidify slightly in the fridge, so let it come to room temperature for a few minutes and shake well before using. Experiment with different vinegars! Apple cider vinegar or white balsamic can also work well.
