Step

Heat the sesame oil in a wok or large skillet over medium-high heat. Add the minced ginger and garlic and stir-fry until fragrant, about 30 seconds. Be careful not to burn the garlic. (30 seconds)

Add the ground pork to the wok, breaking it up with a spatula as it cooks. Stir-fry until the pork is browned and cooked through, about 5 minutes. Drain off any excess grease. (5 minutes)

Stir in the chili bean sauce, soy sauce, sake, and oyster sauce. Mix well to combine all ingredients. Reduce heat to low and let simmer for about 3 minutes, allowing the sauce to thicken slightly. (3 minutes)

Gently add the tofu cubes to the wok, being careful not to break them. Stir gently to coat the tofu with the sauce. Add water as needed to achieve desired sauce consistency, ensuring it's not too watery. Simmer for about 10 minutes, allowing the tofu to heat through and absorb the flavors of the sauce, stirring occasionally. (10 minutes)

Garnish with chopped green onions before serving. Serve hot over freshly cooked white rice.

For a vegetarian version, substitute ground pork with finely chopped mushrooms or plant-based ground meat.
Adjust the amount of chili bean sauce to your preferred level of spiciness.
Firm or medium-firm tofu can be used if you prefer a heartier texture, but silken tofu provides a lovely melt-in-your-mouth experience.
