Preheat & Prep (5 minutes): Preheat oven to 350°F (175°C). Grease an 8-inch square baking pan with cooking spray.

Crust Creation (10 minutes): In a large bowl, cream together the brown sugar and softened butter until well combined. In a separate bowl, whisk together the flour, oats, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Press half of the oat mixture evenly into the bottom of the prepared pan to form the crust.

First Bake (15 minutes): Bake the crust in the preheated oven until lightly golden brown.

Lemon Filling Prep (5 minutes): While the crust is baking, prepare the lemon filling. In a small bowl, whisk together the sweetened condensed milk, lemon juice, lemon extract, and almond extract until smooth.

Assemble & Top (5 minutes): Once the crust is ready, remove it from the oven and pour the lemon filling evenly over the baked crust. Sprinkle the remaining oat mixture evenly over the lemon filling and gently pat it down.

Final Bake (20 minutes): Return the pan to the oven and bake until the filling is set and the top crust is golden brown.

Cool & Chill (2 hours 30 minutes): Remove the bars from the oven and place on a wire rack to cool completely. Once cooled, refrigerate for at least 2 hours to allow the filling to set fully. Cut into 16 bars and serve.

For a richer flavor, use brown butter in the crust.
Fresh lemon zest in the filling will enhance the lemon flavor even further.
Store leftover bars in an airtight container in the refrigerator for up to 5 days.
