Place oxtail, onions, carrots, cabbage, celery, barley, onion soup mix, dill, cinnamon, bay leaf, and water in a large slow cooker. (5 minutes)

Cook on low until meat is tender. (5 hours)

Remove meat and bones from slow cooker; cool on a plate until easily handled. (10 minutes)

Cut meat into small pieces; return meat to the soup and discard bones. Skim off any fat from soup; remove bay leaf. (10 minutes)

Stir beets and beet greens into soup. (2 minutes)

Cook on low until beets are tender. (1 hour)

Season with salt and pepper; top each bowl with about 1 tablespoon sour cream to serve. (5 minutes)

For a richer flavor, brown the oxtail in a skillet before adding it to the slow cooker.
Adjust the amount of water to achieve your desired soup consistency. If you prefer a thinner soup, add more water.
Feel free to add other vegetables, such as potatoes or parsnips, to customize the borscht to your liking.
Serve with a dollop of sour cream or a swirl of plain yogurt for added creaminess.
A squeeze of fresh lemon juice just before serving can brighten the flavors.
This soup tastes even better the next day, after the flavors have had a chance to meld.
