Combine soup bones and water in a large pot. Bring to a boil, then reduce heat to medium-low and simmer gently for 4 hours.

Remove the soup bones and meat from the pot and set aside to cool. Skim any fat from the surface of the broth. Add potatoes, carrots, celery, beets, onion, garlic, salt, paprika, and black pepper to the broth. Bring to a boil again, then reduce heat to medium-low and simmer until the vegetables are tender, about 1 hour.

Pick the meat off the soup bones and add it back to the soup. Discard the bones and fat. Stir in the shredded cabbage, diced tomatoes, and tomato paste. Continue to simmer until the cabbage is tender, about 15 minutes.

For a richer flavor, consider roasting the beets before adding them to the soup.
A dollop of sour cream or a sprinkle of fresh dill adds a delightful finishing touch.
This soup tastes even better the next day, as the flavors meld together.
