Cover the saucepan, reduce the heat to medium-low, and cook for about 25 minutes, or until the rice is tender and most of the liquid has been absorbed. If the rice is not fully cooked at 25 minutes, add a splash of water, cover, and continue cooking until tender. (25 minutes)

Remove the lid and stir the rice well. Cover again and let the rice rest for 5 minutes. This allows the flavors to meld and the rice to finish absorbing any remaining liquid. (5 minutes)

Divide the spinach rice evenly among six bowls. Squeeze ½ lemon over each serving, then top with crumbled feta cheese, pickled red onions, red pepper flakes (if using), and a drizzle of extra virgin olive oil. Serve immediately and enjoy! (5 minutes)
