In a large skillet, arrange the bacon slices in a single layer. Cook over medium heat, turning occasionally, until the bacon is crisp and golden brown. (Approximately 8-10 minutes)

While the bacon cooks, prepare an ice bath. Bring a pot of salted water to a rolling boil. Blanch the green beans in the boiling water until they are bright green and tender-crisp. (Approximately 3-4 minutes). Immediately transfer the blanched green beans to the ice bath to stop the cooking process. Once cooled, drain well and set aside.

Remove the cooked bacon from the skillet and place on paper towels to drain, reserving the bacon fat in the skillet. Once the bacon is cool enough to handle, chop it into small pieces.

Add the chopped sweet onion to the skillet with the reserved bacon fat. Sauté over medium heat until softened and translucent. (Approximately 5 minutes). Stir in the brown sugar, white wine vinegar, salt, dry mustard, and black pepper. Cook, stirring constantly, until the sugar is dissolved and the sauce has slightly thickened. (Approximately 2-3 minutes)

Add the drained green beans to the skillet with the bacon vinaigrette. Toss gently to coat the beans evenly. Stir in the chopped bacon.

Serve the green beans immediately, while warm. Garnish with toasted slivered almonds, if desired, for added texture and flavor.

For a vegetarian option, omit the bacon and use olive oil in place of bacon fat. Consider adding a touch of smoked paprika to the vinaigrette for a hint of smoky flavor.
To add another layer of flavor, consider adding a splash of Worcestershire sauce to the vinaigrette.
The green beans can be blanched ahead of time and stored in the refrigerator until ready to use. Simply add them to the vinaigrette just before serving.
Use high-quality bacon for best results; thick-cut bacon will provide more flavor and texture.
