In a mixing bowl, whisk together the coconut flour and protein powder. Gradually add the eggs, incorporating them fully. Pour in the milk, a quarter cup at a time, until the batter reaches a smooth consistency—neither too thick nor too runny. Gently fold in the coconut flakes and chocolate chips. (5 minutes)

Lightly grease a large skillet with olive oil spray and heat over medium-high heat. (2 minutes)

Slice the banana into approximately 24 equal pieces. Arrange the banana slices in the hot skillet and fry until golden brown on one side, about 3 minutes. Flip the slices, add a small drop of honey to each, and cook until beautifully caramelized, around 3 more minutes. Transfer the caramelized banana slices to a separate plate. (6 minutes)

Using half of the prepared pancake batter, spoon four equal portions into the hot skillet. Gently press 3 caramelized banana slices into each pancake. Cook until bubbles begin to form and the edges appear dry, approximately 3-4 minutes. Flip the pancakes and continue cooking until golden brown on the other side, another 2-3 minutes. Remove the cooked pancakes to a plate and repeat with the remaining batter and banana slices. (15 minutes)

For an extra boost of flavor, try adding a dash of vanilla extract or a pinch of cinnamon to the pancake batter.
