Follow The Directions

01

Step

Soak the Red Beans: Place the dried red beans in a large bowl and cover with several inches of cool water. Let them soak for at least 3 hours, or preferably overnight. This softens them and shortens cooking time. (3+ hours)

02

Step

Initial Simmer: Drain and rinse the soaked red beans. In a large pot, combine the red beans and barley. Add enough fresh water to cover about half the pot. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot, and simmer gently until the beans and barley are tender. (1 hour)

03

Step

Rice and Mung Bean Addition: Stir in the glutinous sweet rice to the pot. If the mixture appears dry, add more water to maintain a porridge-like consistency. Cook for about 20 minutes, then add the dried mung beans. Continue cooking for another 20 minutes. (40 minutes)

04

Step

Final Grains and Sweetening: Add the oats, millet, and tapioca to the pot. Cook, stirring every 5 minutes to prevent sticking, until all the grains are softened and the porridge has thickened to your liking, approximately 20 minutes. Add more water as needed to achieve the desired consistency. (25 minutes)

05

Step

Sweeten and Finish: Stir in the brown sugar and raisins. Cook for an additional 5 minutes, allowing the flavors to meld together beautifully. (5 minutes)

06

Step

Rest and Serve: Remove the pot from the heat. Stir occasionally as it cools slightly to prevent a skin from forming on top. Serve the Eight Treasure Porridge hot for a comforting warmth, or chilled for a refreshing treat.

Feel free to substitute any of the grains or beans with your favorites. Common additions include jujubes, lotus seeds, dried longan, nuts, and other dried fruits.
Adjust the amount of brown sugar to your preference. You can also use other sweeteners like honey or maple syrup.
For a richer flavor, consider using coconut milk instead of water for part of the cooking liquid.
