Follow The Directions

01

Step

Preheat your waffle iron according to the manufacturer's instructions. Lightly coat the waffle iron with cooking spray. (5 minutes)

02

Step

In a large bowl, whisk together the flour, malted milk powder, cornmeal, sugar, baking powder, and salt. (3 minutes)

03

Step

In a separate bowl, whisk together the milk, beaten eggs, melted butter, and vanilla extract. (2 minutes)

04

Step

Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are perfectly fine. (2 minutes)

05

Step

Pour the batter onto the preheated waffle iron, using the amount recommended by your waffle iron's instructions. Cook until the waffles are golden brown and crisp, usually about 3-5 minutes per batch. (3-5 minutes per batch)

06

Step

Carefully remove the waffles from the iron and serve immediately with your favorite toppings such as fresh fruit, maple syrup, whipped cream, or a dusting of powdered sugar.

For a richer flavor, try using brown butter instead of melted butter. To brown the butter, melt it in a saucepan over medium heat and cook until the milk solids turn golden brown and the butter has a nutty aroma. Let it cool slightly before adding it to the wet ingredients.
If you don't have malted milk powder, you can substitute it with an equal amount of nonfat dry milk powder and 1/2 teaspoon of barley malt syrup.
For best results, serve the waffles immediately after cooking. If you need to keep them warm, place them on a wire rack in a preheated 200°F (95°C) oven.
