Prepare the Tofu: Wrap the tofu block in a clean, lint-free kitchen towel. Place it on a plate, top with another plate, and weigh it down with a 3-5 pound weight (a few cans work great!). Press for 20 minutes to remove excess water. This step is crucial for achieving maximum crispiness. Drain and discard the liquid. (20 minutes)

Season the Tofu: Cut the pressed tofu into 1-inch by 2-inch rectangles. Sprinkle 1/4 teaspoon of salt evenly over one side of the tofu pieces. Flip them and sprinkle the remaining 1/4 teaspoon of salt over the other side. (5 minutes)

Heat the Oil: Pour vegetable oil into a wok or a large, heavy-bottomed skillet to a depth of about 1 inch. Heat the oil over medium-high heat. Test the oil's readiness by dipping a chopstick or wooden spoon into it. If bubbles vigorously rise around the wood, the oil is ready. Be careful not to overheat the oil to the point of smoking. (5 minutes)

Fry the Tofu: Gently add 5-8 tofu pieces to the hot oil, ensuring not to overcrowd the pan. Work in batches to maintain the oil temperature. Fry for 3-4 minutes per side, until the tofu is a deep golden brown and wonderfully crispy. Use metal tongs to carefully flip the tofu. Use a splatter guard if you have one, as the oil may splatter. (15 minutes)

Drain and Cool: Remove the fried tofu from the oil and place it on a plate lined with several layers of paper towels to absorb excess oil. Let the tofu cool slightly before serving. This allows it to crisp up even further. (5 minutes)

Pressing the tofu is key to achieving a crispy texture. Don't skip this step!
For even crispier tofu, you can lightly dust the tofu pieces with cornstarch before frying.
Serve immediately for the best texture. If you must store leftovers, reheat them in a dry skillet or air fryer to re-crisp.
Experiment with different dipping sauces! Soy sauce, sweet chili sauce, peanut sauce, or a spicy mayo are all excellent choices.
