Create Sauce: Pour in the chicken broth and stir in the Dijon mustard. Season with salt and pepper. Simmer for about 5 minutes to allow the flavors to meld. Return the chicken tenders to the skillet, ensuring they are submerged in the broth mixture. Cook until the chicken is cooked through, about 5 minutes more, or until an instant-read thermometer inserted into the center registers 165°F (74°C).

Combine and Finish: Remove the chicken from the skillet and place it atop the cooked pasta. Continue to simmer the sauce until it thickens slightly, about 3 minutes. Turn off the heat and stir in the heavy cream. Add the chopped spinach and stir until it wilts, roughly 1 minute. Pour the creamy sauce over the chicken and pasta. Sprinkle with Parmesan cheese and garnish with fresh parsley before serving.

For a richer flavor, use bone-in, skin-on chicken thighs instead of tenders, increasing cooking time accordingly.
Experiment with different types of mushrooms, such as shiitake or cremini, for added depth of flavor.
Add a splash of white wine to the sauce after sautéing the vegetables for a more complex flavor profile.
To make it vegetarian, omit the chicken and add more vegetables like bell peppers or zucchini.
