Follow The Directions

01

Step

In a medium bowl, whisk together the orange juice, toasted cumin, minced chipotle pepper (and adobo sauce, if using), and sea salt. (5 minutes)

02

Step

Place the skirt steak in a resealable plastic bag or a shallow dish. Pour the citrus marinade over the steak, ensuring it's fully coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 4 hours, or preferably overnight (up to 24 hours). (5 minutes)

03

Step

Preheat an outdoor grill to medium-high heat (about 375-450°F) and lightly oil the grill grate. (10 minutes)

04

Step

Remove the steak from the marinade and discard the marinade. Place the steak on the preheated grill. (2 minutes)

05

Step

Grill the steak for 3 to 4 minutes per side for medium-rare, or until it reaches your desired level of doneness. Use an instant-read thermometer inserted into the thickest part of the steak to check for doneness (130-135°F for medium-rare). (8 minutes)

06

Step

Remove the steak from the grill and let it rest for 5-10 minutes before slicing thinly against the grain. (10 minutes)

07

Step

Serve immediately on warm tortillas with your favorite fajita toppings such as grilled peppers and onions, salsa, guacamole, sour cream, and shredded cheese.

For best results, toast the cumin seeds in a dry skillet over medium heat for a few minutes until fragrant before grinding. This will enhance their flavor.
If you don't have access to an outdoor grill, you can cook the steak in a hot cast-iron skillet on the stovetop or under the broiler.
Adjust the amount of chipotle pepper to your liking, depending on your spice preference.
Consider adding a splash of lime juice to the marinade for extra tanginess.
Marinating the steak for the full 24 hours will result in the most tender and flavorful fajitas.
