In a 1-gallon freezer bag, combine the diced green chiles, canola oil, chopped fresh cilantro, lime zest and juice, finely chopped garlic, minced jalapeno, honey, kosher salt, and ground black pepper. Seal the bag completely, pressing out any excess air. Gently massage the bag to thoroughly combine all the ingredients. (2 minutes)

Add the chicken breasts to the bag, ensuring they are fully coated in the marinade. Turn the bag several times to evenly distribute the marinade. Place the bag in the refrigerator and marinate for at least 4 hours, or preferably overnight, turning the bag occasionally to ensure even marination. (5 minutes)

Preheat an outdoor grill to medium heat (about 350-400°F or 175-200°C) and lightly oil the grill grate to prevent sticking. (5 minutes)

For best results, marinate the chicken overnight to allow the flavors to fully penetrate. The longer it marinates, the more flavorful and tender it will be.
If you don't have a grill, you can also cook the chicken in a skillet on the stovetop or bake it in the oven at 375°F (190°C) for about 20-25 minutes, or until cooked through.
Feel free to adjust the amount of jalapeno pepper to your liking, depending on your spice preference. For a milder flavor, remove all the seeds and ribs before mincing.
This marinade is also delicious with pork tenderloin, beef flank steak, or shrimp. Adjust the cooking time accordingly.
