In a large bowl, combine the cooked ground beef mixture, ricotta cheese, 1/2 cup shredded Cheddar cheese, egg, Parmesan cheese, parsley, garlic powder, onion powder, salt, and pepper. Mix until well combined.

Spread 1/3 of the sauce mixture evenly over the bottom of a large baking dish. Top with 1/2 of the drained diced tomatoes. Stuff each cooked pasta shell with 1 to 2 tablespoons of the beef and cheese mixture. Arrange the stuffed shells in a single layer over the sauce and tomatoes.

Pour the remaining sauce mixture and tomatoes over the stuffed shells. Cover the baking dish tightly with aluminum foil.

For a spicier kick, add a pinch of red pepper flakes to the ground beef mixture.
To make ahead, assemble the stuffed shells in the baking dish, cover tightly, and refrigerate for up to 24 hours. Add an extra 10-15 minutes to the baking time.
You can substitute ground turkey or chicken for the ground beef.
For a smoother sauce, use crushed tomatoes instead of diced tomatoes.
