For a richer flavor, use chicken broth instead of vegetable broth. If you don't have watercress, a sprinkle of chopped parsley or chives works well as a garnish. The soup can be made ahead of time and reheated. Add the remaining Stilton and garnish just before serving. For a smoother soup, strain it through a fine-mesh sieve after pureeing.
