Step

Preheat the oven to 375 degrees F (190 degrees C). (Prep time: 5 minutes)

Melt butter in a skillet over medium heat. Add chopped onion and cook, stirring occasionally, until softened and translucent, about 8-10 minutes.

Pour in red wine to deglaze the pan, scraping up any browned bits from the bottom. Sprinkle with sugar and continue to cook, stirring occasionally, until onions are deeply caramelized and jammy, about 10-15 minutes.

In a separate bowl, combine heavy cream, mozzarella cheese, cayenne pepper, salt, and black pepper. Stir well to combine.

Stir the cream mixture into the caramelized onion mixture and cook for another 2-3 minutes until slightly thickened.

Cut pie crusts into 3-inch circles using a cookie cutter. Gently press each circle into the bottom of 12 muffin cups in a muffin tin.

Spoon the onion mixture evenly into the tart crusts, filling each one to the top.

Bake in the preheated oven until the crusts are golden brown and the filling is set, about 18-22 minutes. Let cool in the muffin tin for 10 minutes before carefully popping the tartlets out.

For a richer flavor, try using Gruyere or Parmesan cheese instead of mozzarella.
Add a sprig of fresh thyme or rosemary to the onion mixture for an herbaceous note.
These tartlets can be made ahead of time and reheated before serving. Store in an airtight container in the refrigerator for up to 3 days.
If you don't have a cookie cutter, you can use a knife to cut the pie crust into squares or other shapes.
