In a large skillet over medium-high heat, cook the pork sausage, breaking it apart with a spoon, until browned and fully cooked, approximately 5-7 minutes. Drain off any excess grease and set aside to cool slightly.

Pour the egg mixture into the prepared skillet and cook, stirring occasionally, until set but still slightly moist, around 3-5 minutes. Remove from heat and set aside to cool slightly.

Spread softened butter evenly over one side of each tortilla. Heat a clean skillet or griddle over medium heat. Place a tortilla, buttered-side down, in the skillet. Layer with a portion of the cooked sausage, followed by the cooked eggs, and then the shredded cheddar cheese. Top with another tortilla, buttered-side up.

Cook the quesadilla until golden brown and crispy on the bottom, about 2-3 minutes. Carefully flip the quesadilla and cook for another 2-3 minutes, or until the second side is golden brown and the cheese is melted and gooey. Transfer the cooked quesadilla to a cutting board.

Repeat the process with the remaining tortillas and fillings.
