Follow The Directions

01

Step

In a large skillet, cook the bratwurst (casings removed), carrots, and onion over medium-high heat until the bratwurst is browned and crumbly. (Approximately 7 minutes)

02

Step

Add the cooked navy beans, chicken broth, and chopped jalapenos to the skillet. Bring the mixture to a boil.

03

Step

In a separate bowl, whisk 1/2 cup of milk with the all-purpose flour until smooth. Add this mixture to the soup, stirring continuously until the soup has thickened. (Approximately 3 minutes)

04

Step

Reduce the heat to low. Add the remaining 1 cup of milk and the shredded Cheddar cheese. Stir until the cheese is completely melted and the soup is smooth and creamy.

05

Step

Stir in the torn fresh spinach and cook until it has wilted. (Approximately 1-2 minutes)

06

Step

Season the soup with salt and freshly ground black pepper to your liking.

For a richer flavor, consider using smoked bratwurst.
If you prefer a smoother soup, you can use an immersion blender to partially blend the soup before adding the spinach.
To add depth, consider browning the bratwurst in butter.
Adjust the amount of jalapenos according to your spice preference.
Freshly grated cheddar cheese is highly recommended for optimal melting.

I made this in my slow cooker and it turned out great! Just browned the sausage and veggies first, then added everything to the slow cooker for 4 hours on low.
