For a smoother syrup, use an immersion blender to puree the mixture after simmering, before adding the cornstarch. If you prefer a tarter syrup, reduce the amount of sugar to 1/3 cup. The amaretto liqueur can be substituted with 1/2 teaspoon of almond extract if preferred. Store the cooled syrup in an airtight container in the refrigerator for up to 2 weeks.
