Prepare the Mint Syrup: In a microwave-safe bowl, combine 2 cups of water and the sugar. Microwave on high for 5 minutes, or until the sugar is completely dissolved. (5 minutes)

Infuse the Syrup: Stir in the chopped mint leaves and let steep for 5 minutes. This allows the mint flavor to fully infuse the syrup. (5 minutes)

Strain and Cool: Strain the syrup through a fine-mesh sieve to remove the mint leaves. Discard the leaves and set the mint syrup aside to cool. (2 minutes)

Combine Ingredients: In a large pitcher, combine the softened lime sherbet, lime juice, and 1 cup of water. Stir until well combined and smooth. (3 minutes)

Add Syrup and Soda: Pour the cooled mint syrup into the lime mixture. Gently stir in the chilled club soda. (2 minutes)

Serve: Serve immediately over ice. Garnish with fresh lime slices for an extra touch of elegance. (1 minute)

For an extra burst of flavor, muddle a few mint leaves and a slice of lime in the bottom of each glass before adding the Mojito.
Adjust the amount of sugar in the syrup to your liking. If you prefer a less sweet drink, use slightly less sugar.
Make sure the club soda is well-chilled to keep your Mojitos refreshingly cold.
This recipe can easily be doubled or tripled to serve a larger crowd.
