Follow The Directions

Preheat your air fryer to 400 degrees F (200 degrees C). (5 minutes)

In a large skillet, combine the ground pork, water chestnuts, shiitake mushrooms, sesame oil, soy sauce, and Sriracha sauce. Cook over medium-high heat, breaking up the pork with a spoon, until the pork is fully cooked and no longer pink. (6 minutes)

Remove the skillet from the heat and allow the mixture to cool slightly until it's easy to handle. (5 minutes)

Lay out 8 dumpling wrappers on a clean, dry work surface. Place a heaping teaspoon of the pork mixture in the center of each wrapper.

Moisten the edges of the wrapper with a little water. Fold the wrapper in half to form a half-moon shape and pinch the edges firmly to seal, creating pleats if desired.

Arrange the potstickers in a single layer in the preheated air fryer basket, ensuring they aren't overcrowded.

Air fry for 3 minutes, then use tongs to carefully flip the potstickers and cook for another 3 minutes, or until golden brown and crispy. (6 minutes)

Transfer the cooked potstickers to a paper towel-lined plate to drain any excess oil. Repeat steps with the remaining pork mixture and dumpling wrappers.

For extra flavor, add 1 teaspoon of grated ginger and 1 clove of minced garlic to the pork mixture.
Serve immediately with your favorite dipping sauce. A classic combination of soy sauce, rice vinegar, and sesame oil is always a winner!
Don't overcrowd the air fryer basket, or the potstickers will steam instead of crisping. Work in batches if necessary.
If you don't have shiitake mushrooms, you can substitute with cremini or button mushrooms.
Leftover potstickers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer for a few minutes to restore their crispness.
